Ingredients in Stir-Fried Vegetables in Olive Oil:
- Zucchinis: 2 unpeeled and cut in cubes
- Bell Peppers (red, yellow and green): chopped
- Brocolli Florets: 2 cups
- Red onions: 1, chopped
- Rosemary: 3 sprigs, chopped
- Baby Corn: 1/2 cup
- Sliced Mushrooms: 1/2 cup
- Sliced Scallions: 1/4 cup
- Olive oil: 4tsp
- Salt and pepper to taste
Procedure to make Stir-Fried Vegetables in Olive Oil:
- Heat a wok with olive oil. Mix all the vegetables and stir fry with rosemary, salt and pepper. (*If you do not have rosemary, you can use mixed Italian herbs too.)
- Stir fry for about 3-4 minutes and serve warm.
