Potatoes and Capsicum sautéed in spice

Living alone teaches you a lot! Specially, when you have one great friend to live with who knows how to cook. Assisting her for over two years now, in our neatly kept apartment, I have learnt one great fundamentalism about cooking. That is, there are no rules as to how to cook a good platter.

Cooking is nothing but the harmony of flavor, taste, color and your passion for cooking! It comes to one quite naturally if you love to cook. Strike it right and you’ll see that the secret to great recipes are quite simple. Believe it or not, my grand-mom could always take out the biryani properly cooked, just by the smell and color of it. My friend’s cooking solely depends on the availability of ingredients in the house. And believe me, it always comes out delicious. It’s math: as simple as 2+2= 4, plain harmony. Maybe, chemistry?

With hunger eating us from within and Potatoes, capsicum, onions, garlic and tomatoes in our refrigerator, this is what cooked in the kitchen! Eureka. Fabulous food in just 15 minutes.

Ingredients

Onions- 3 medium, sliced finely

Garlic- 5-6 cloves cut

Tomatoes- 1 big, chopped

Potatoes- 4 big, sliced

Capsicum-2, sliced

Spices

Cumin powder- 2tbsp

Coriander powder- 2tbsp

Garam Masala- 2tbsp

Red Chilli Powder- 2tbsp

Meat masala/chicken masala- 2tbsp

Turmeric- ½ tbsp

Oil- 1 tbsp

Procedure

Heat a wok with 2tbs of oil in it. When the oil is heated, fry the onions and garlic till translucent. Now add the capsicum and cook for another 2-3 minutes. Add the tomatoes now and cook for another 2-3 minutes along with all the spices. Now add the potatoes and let it cook under slow heat. Check occasionally and cover it with a lid till it’s properly cooked.

We couldn’t garnish because we were too hungry to do it. You could use corianders as garnishing and a piece of lime!
