I’m not too fond of the potato like the rest of the universe. But since I had a time crunch and had a batch of boiled potatoes in the fridge, I decided to try something new. After I had made the dish I realized that it’s better to use boiled potatoes for this recipe, since it does not call for much oil than otherwise. Just at a whim I coarsely ground some roasted peanuts and mixed it with the potato and the effect was amazing!!
Ingredients:
- 4 large boiled potatoes
- 1 green chili
- 100 gm roasted peanuts
- Salt
- Turmeric powder
- 1 tsp red chili powder
- 1 tsp mustard oil
- 2 tbsp oil
Method:
- Heat some oil in a pan, add the mustard seeds
- Once it crackles, add the chopped green chili and stir
- Add the chopped boiled potatoes, salt, turmeric and red chili powder and stir
- Keep the lid of the pan closed so that the potatoes become crisp
- Add more oil if required
- Towards the end, grind the roasted peanuts coarsely and sprinkle it on the potatoes
- Again stir and keep the pan closed for 5 minutes
- Serve hot with rice/ chapatti
