Wash poha thoroughly and leave aside for 10 minutes. Heat oil in a wok or pan and crackle mustard seeds, asafoetida, gren chili, onions and turmeric powder. Let it cook for 3-4 minutes until the onions are translucent. Now, add the cubed potatoes, ginger garlic paste, red chili powder, coriander powder, salt and sugar and let it cook till the potatoes are tender. Add poha and toss. Garnish with chopped coriander.
