Guvar Nu Shaak. Yes, it has to be a Gujarati vegetarian recipe. A popular Gujarati recipe, Guvar is from the bean family- the only difference would be in its look; cluster beans or guvar are slightly flattened and are thinner than normal beans. To be very honest, I am not a bean person, we never tried the guvar nu shaak recipe until recently at a friends place: blame my dislike to vegetables and also towards anything with jaggery. But to my surprise, the guvar nu shaak I tasted was completely different to the one I had in mind. When I say different, I only mean better.
Here’s the Guvar Nu Shaak recipe – an easy and simple vegetarian recipe that can be prepared anytime and also has a high health quotient. What more, with the same condiments, you can also prepare potatoes, French beans and also carrots and cauliflowers.
Ingredients in Guvar Nu Shaak:
- Guvar- 500 gm
- 1/3 tsp chili powder
- 2 tsp jaggery
For tempering –
- 3 tbs oil
- 1/2 tsp mustard seeds
- 1/2 tsp chopped garlic
- 1/3 tsp tumeric
- a pinch of asafoetida
- 1/3 tsp chili powder
Procedure to make Guvar Nu Shaak:
- Cut the ends of the gawar and pull it to take the thread out from its side. Cut them into 2” squares.
- In a wok, heat about 2 tablespoon of oil and pop the mustard seeds. Let it splatter.
- Follow by asafoetida (hing) & chopped garlic.
- Temper the oil well and add turmeric and red chilli powder. Do all of this in low heat as you wont want to burn any spice.
- Once the ingredients in the wok are well mixed, add your gawar and cover cook for 15 minutes, followed by 3-4 minutes open cooking, stirring occasionally.
- Once it changes color and becomes soft, add jaggery and red chili powder. Cook for another 2-3 minutes and you’ll be done.
- Serve with rotis!
