I used to wonder what new variations there are to the cauliflower preparation and I was delighted to come across this one. It requires one to add a few spoonfuls of curd while cooking it and the results were awesome. Another option is to marinate the cauliflower florets in the spiced up curd. I’ve chosen the easier way out.
Ingredients:
- 1 large onion
- ½ kg cauliflower
- 1 tbsp ginger garlic paste
- 1 tsp cumin seeds
- 1 tsp garam masala powder
- 1 pinch turmeric powder
- 1 tsp red chili powder
- 1 tsp coriander powder
- 2 tbsp oil
- 2 tbsp curd
- Salt
- 1 pinch sugar
Method:
- In a bowl, mix curd, salt, turmeric powder, red chili powder, garam masala, coriander powder and keep it aside
- In a pan, heat some oil and add cumin seeds
- After it splutters, add chopped onion and ginger garlic paste and fry it well
- Add cauliflower florets and the curd mixture and stir well
- Add some water, adjust salt and cover the pan with a lid till the cauliflower is cooked well
- Add a pinch of sugar
- Serve hot with rotis
