Baba Ganoush
Time taken: 30 min
Taste-o-meter: non-spicy
Ingredients:
- Eggplant (large): 1
- Tahini: 1/4 cup
- Cloves: 3
- Lemon juice: 1/4 cup
- Ground cumin: a pinch
- Salt: to taste
- Olive oil: 1 tbsp
- Parsley (chopped): 1-2 tbsp
- Olives: 1/4 cup
Method:
- Now you can do this either on a charcoal grill or you can play a wire rack over the regular gas stove and roast it.
- Take an eggplant, prick it in several places and put it to roast under high heat, twisting and turning it in between to evenly roast it. When soft and black on the outer side, take it out, cool it and discard the skin.
- In a bowl, mash the eggplant as fine as you can do, pour other ingredients except the olive oil and olives.
- In a serving bowl, pour the eggplant mixture, create a well and pout-in the olive oil. Garnish with olive and serve with pita bread.
