This is one of my favourite vegetarian dishes in the Indian cuisine. Fenugreek, also called Methi, gives this dish a slightly bitter flavour. However for all the potato lovers out there, you have one more healthy excuse for eating potato. This is a healthy alternative to the plain potato vegetable and makes for a nutritious dish.
Ingredients:
- 1 bowl washed and finely chopped fenugreek leaves (methi leaves)
- 1 bowl washed and chopped potato
- 2 tbsp olive oil for cooking
- Salt to taste
- 1tsp mustard seeds
- A pinch of asafoetida
- 2tsp red chilli powder
- 1tsp turmeric powder
- Small piece of jaggery
- 2tsp dry coriander powder
- ½tsp hot spices / garam masala
- 1tsp chopped coriander leaves
Method:
- Heat oil in a frying pan on the gas. Add mustard seeds and wait till they start popping. Add asafoetida, turmeric powder, chilli powder. Stir a little and then add the potato pieces. Stir again. Cover the pan and cook on slow flame. Check after every 3 to 5 minutes. When potatoes become softer, add chopped fenugreek leaves and salt to it. Stir and cover. Cook for some time, add little jaggery or sugar to it. Mix and cook till jaggery mixes properly. Once colour changes to brown, add coriander powder, chopped coriander, garam masala and mix all of it properly. Remove it from the gas and serve it while it is hot.
