Great recipe for a lazy sunday brunch, with toasted garlic bread and an icy slurrpy tinged with mint.
Ingredients:
- 2 bell peppers, sliced
- 2 onion, chopped
- 10 tomatoes, chopped
- 5 cloves garlic chopped
- 4 tbs oil
- 4-6 eggs
- Salt and pepper
Procedure:
- In a frying pan, heat oil. Fry the onion for 2 minutes, until pink and translucent. Then add the garlic and bell peppers.
- Continue to cook until the the onion and bell peppers have softened. Now add the tomatoes, salt and pepper. Mix well.
- Break the eggs, one at a time directly into the frying pan, leaving some gap in between the eggs. Cover it with the lid and cook on a low heat till the eggs are cooked but a bit soft to the touch.
- Serve hot with bread.
