A filling breakfast / brunch that’s specially instrumental in kick-starting your Sundays. Served with toasts.
Ingredients:
- 2 Eggs
- 1 table spoon oil
- 1 medium size onion
- 100 gms salted potato chips
- salt, pepper, oregano to taste
- 1/2 teaspoon chili powder
- Coriander for garnishing
- For Dip:
- 1 table spoon tomato ketchup
- 1/2 table spoon mustard sauce
Procedure:
- On a frying pan put some oil, sauté onion till golden brown and add potato chips. Sprinkle salt, pepper, chili powder and oregano and cover it for 2 mins then make a bed of it,
- Carefully put eggs on this bed of onion and potato chips one by one. Cover it and let the eggs get cooked. (can be kept as in half fry, however full fry tastes better)
- Add pepper,oregano (optional)
- Garnish with coriander leaves.
- Carefully take it off the pan,so that the egg remain on the bed of onion and potato chips.
Procedure for Dip
- Mix 1 table spoon tomato ketchup and 1/2 table spoon mustard sauce to make a tangy dip.
- Serve Nestled Egg with this tangy dip.Can also be eaten with Bread Toast.
