The Upma as I’ve mentioned earlier has many variations. One of them is the Tomato Upma. Just to break the monotony of the regular Semolina Upma, I added one large tomato to it. It enhances the flavor and also the color of the dish. And what more, it’s healthy too.
Ingredients:
- 1 cup roasted semolina
- 1 tsp mustard seeds
- ½ tsp urad dal
- ½ tsp chana dal
- 1 tsp grated ginger
- 1 green chili (optional)
- 1 large tomato
- Salt
- 3 cups water
- 1 tbsp ghee
- 1 tbsp oil
- 1 pinch sugar
Method:
- In a pan, heat some oil and add the mustard seeds
- Once it splutters, add urad dal, chana dal, green chili and grated ginger and stir
- Add 3 cups of water and add salt
- Add the chopped tomato and once the water boils, add the roasted semolina slowly, stirring constantly
- Keep stirring till the semolina absorbs the water and is cooked
- Add a pinch of sugar
- In the end add the ghee and stir
- Serve hot with chutney
