Downpour! Know what we mean? It’s been raining here since yesterday and the heat has suddenly taken aback with these expected showers, making the days dreamy and nights cozy with light blankets and cups of tea! It’s clean and green all over again: the soul, the trees and the mood. Not the jaded green, the lively green! The green that calls for a walk.
Hence to make these happy feelings even more happier, in the Slurrpy kitchen, we thought of brewing some nostalgic treat, a soup for the soul. The only difference being, this time its made with Tomato!
Ingredients:
- Tomatoes: 6 big
- Onions: 1 small, sliced
- Garlic: 1 large clove, minced
- Water: 3 ½ cup
- Tomato Paste: 2 tbsp
- Heavy cream: 1 cup
- Flour: 1/4th cup
- Salt & pepper to taste
Procedure:
- In a saucepan, put tomatoes, onions, garlic and ½ a cup of water. Cover and cook for 15 minutes before adding tomato paste, salt and pepper.
- In a bowl, combine 1/4th cup of flour to ½ cup of water and stir it into the hot soup. You’ll see it thickening immediately.
- Switch the stove off and let it cool for 5 minutes. Pour it in a blender and strain. Add the heavy cream to the cooled soup and heat 2 minutes before serving.
