Yes, the word has a ring to it. And although most of us like to fantasize a sun-kissed, gorgeous summer, truth is in the tropics, it hits one real hard! In the Indian subcontinent, a lot of us dread summer; more so when you have to return home to a regular dinner.
Thank God for this wonderful cooling soup that summers do not feel as bad. Not on a week night anymore!
Avocado Soup
Ingredients:
- Ripe, seeded and peeled avocados: 2
- Cold water: 2.5 cups
- Cream: 1 can
- Garlic: 2 cloves
- Fresh lime juice: 3 tbsp
- Chicken flavor bouillon: 4 tbsp
- Cilantro: optional, for garnish
- Salt to taste
Method:
Blend everything in a processor and refrigerate for an hour. Serve with cilantro.
