A healthy alternative to traditional pancakes, we didn’t know about this until our friend from Darjeeling suggested it to us. Well, That’s how far as Tofu has reached from China we guess but once we tried it on a dull and dreary saturday morning, we fell in love with it.
Here’s to you a traditional English breakfast with a twist.
Ingredients:
- 1 box silken tofu
- or 1/4 cup low-fat cottage cheese
- 4 egg whites
- 1 teaspoon vanilla extract
- 1/4 teaspoon cinnamon
- 1/4 teaspoon nutmeg
Procedure:
- Blend all in a blender.
- Ladle batter on to a non stick pan and cook both sides until golden brown
- Maple syrup, honey, cranberry juice or cream with fresh fruits. Anything is slurrpable, just fine.
