1 packet egg noodles
250 gms chicken breast cut into strips (you can use your choice of meat)
Your choice of vegetables cut into strips
4 tbsp vegetable oil
2 slices ginger
3 cloves garlic, sliced thinly
2 Tbsp oyster sauce
1 tbsp soy sauce
1/2 tsp of granulated sugar
Marinade for stir-fried meat
2 Tbsp soy sauce
2 Tbsp rice wine
1/2 tsp sugar
1 Tbsp corn starch
1/4 tsp white pepper
Procedure
Marinate the meat with the following and set aside.
Boil a pot of water and cook the noodles.
Remember to stop cooking the noodles a little before it’s fully cooked as you will be stir frying it later again. Rinse in the noodle in cold water and set aside.
In a wok or a pan, heat 1 tbsp of oil and add the ginger slices and let it perfume the oil. When the ginger is fragrant, add the meat and stir fry for 2-3 minutes. Set aside.
In a separate pan heat about 2tbsp of oil and stir fry the veggies. Season with salt and cook till the vegetables are stirred but not overtly cooked. Over cooking the vegetables will result in loss of color and crunchiness. Set aside.
Heat 2tbsp oil over medium heat and add the noodles. Stir it and break lumps if any. Fry for 1-2 minute and add your meat and vegetables. Toss them on and mix them properly. Add oyster sauce, soy sauce, salt and sugar.
Toss them for another 1 minute and stir fried noodle is ready to slurp.
