Traditionally custards were made with much more ingredients like egg yolks, cream, vanilla pod, milk and sugar blended together. Now the easily available custard powder makes the complex process a much simpler one. I must proudly say my grandmother still makes the best custard I’ve ever relished; her ‘caramel custard’ is one of those dessert delicacies we used to long for, I guess we still do. However, thanks to the introduction of custard powder, for those of us who do not have to strive hard and also hold an expertise in making custard, this shows us the simpler way to reach out to a yummy dessert. Well I try to add few variations to the custard, like different fruits or the presentation, as it is our all time favourite, easy-make and instant dessert.
Mango Custard Served with Biscuit Powder and Nuts
Ingredients:
- 1 litre of milk (full-cream or toned)
- 4 tbsp of vanilla custard powder
- 6 tbsp of sugar
- 1 ripe mango (de-skinned and cut into cubes)
- 5-6 bourbon biscuits (ground in a blender) for garnish
- Almonds – dry roasted and slivered for garnish. If preferred use other nuts too.
Method:
- In a bowl mix well the custard powder with ½ cup of milk (preferably cold milk). Ensure that no lumps are formed.
- In a thick bottomed saucepan bring to boil the remaining milk with sugar.
- Then remove from heat, add the custard mix and return to flame. Cook again for few minutes, stirring continuously to avoid burning the custard at the bottom of the pan.
- Now when it’s nice and thick the custard is ready. Allow to cool.
- In a wide (glass) bowl, tip in the mango cubes, over this lay out the custard using a spoon. Level the layer and then tip in a few more mango cubes as the next layer. Follow this pattern till done.
- Allow to set in the refrigerator for few hours.
To serve:
- Serve in mini glass bowls. First sprinkle a good amount of the biscuit powder at the base of the bowl.
- Then a layer of mango custard. Be generous with the mango pieces they give a wholesome taste to the dessert.
- Over the custard layer sprinkle a few almonds and biscuit powder.
- Drop in a blob of custard with a mango piece or two in the centre.
- Sprinkle a few more almonds and serve chill.
