Last Saturday, I wanted pancakes, and that too for dinner. I didn’t like the recipes I found, so I used one of them as a “base” and adapted it to my own liking, as I wanted Pear and Cinnamon Pancakes. Here’s what my breakfast-for-dinner recipe was.
Cinnamon Pancakes with Caramelised Pear Syrup
Ingredients for the pancakes:
- All-purpose flour: 170 g
- Sugar: 30 g
- Baking powder: 15 g
- Salt: 3 g
- Egg:1
- Milk: 250 ml
- Butter (softened): 50 g
- Mashed pears: 2
- Cinnamon: 3 g
Ingredients for the syrup:
- Packed brown sugar: 230 g
- Water: 120 ml
- Butter: 25 g
Method:
- In a small bowl, combine the flour, sugar, baking powder, cinnamon and salt. Combine the egg, milk and butter; stir into dry ingredients, until just combined.
- Pour the batter by 1/3 cupfuls onto a lightly greased hot griddle. Flip over when bubbles form on top of the pancake; cook until the second side is golden brown.
- Leave out the pears from the pancake batter. In a small saucepan, caramelise with a little bit of butter and some of the sugar. Combine with the other syrup ingredients. Cook until sugar is dissolved. Serve with the pancakes.
