Bhindi-Aloo-Bori Tarkari- A Bengali Delicacy

I had picked up a packet of Bori from the super market last week. Boris are sun dried cones made of lentil paste to be used with fish and vegetables in a gravy based curry and is very common in Bengali homes. I decided to try it out with Bhindi and Aloo (Okra & Potatoes). It had a very mild taste and made for one of those simple yet delectable dishes. The Boris can also be added with Kadhi and since it’s made of lentils, it’s a wholesome dish even if used by itself as dumplings in a gravy without vegetables.

Ingredients

  • 10- 12 Boris
  • 150 gm Okra
  • 2 Potatoes
  • 1 tsp ginger- garlic paste
  • ½ tsp Turmeric powder
  • Salt to taste
  • 2 tbsp oil
  • 2 cups water

Method:

  • Heat some oil in a pan and roast the boris for around 5 minutes init and keep it aside
  • In the same pan, take some more oil and fry the chopped okra till they are slightly brown
  • Add chopped potatoes, ginger garlic paste, salt and turmeric along with 2 cups water
  • Close the lid of the pan and cook till the potatoes are soft
  • Add the boris and close the lid of the pan till the boris absorb the gravy
  • The dish should not be dry and should be a little watery
  • Serve hot with rice/ rotis
