I was totally floored by this dish when I first tasted it. My colleague had got it in her lunch box, but even before lunch we went down to our office canteen and devoured it with ketchup. It’s called ‘batatyache kaap’, meaning ‘sliced potatoes’ in Marathi. It’s very simple but tastes amazing and can be served as snacks or as a side dish with Pulav/ rice, etc. Having run out of all vegetables except potatoes, last week, I was happy that the situation had provided me the opportunity to try this out without postponing it any further.
Ingredients:
- 1 big potato
- ½ tsp turmeric powder
- 1 tsp red chili powder
- ½ tsp asafetida
- ½ tsp coriander powder
- ½ tsp cumin powder
- 2 tbsp Fine semolina
- 3 tbsp oil
- Salt to taste.
Method:
- Wash and peel the potatoes. Cut them into thin circular slices.
- Soak the slices in salt water for 10 minutes. Drain and wipe the slices with a kitchen towel.
- In a plate mix all ingredients except potato and oil.
- Do not add water.
- Heat a pan and pour some oil
- Dip each potato slice into the prepared masala and coat both sides of the slice with it.
- Place the potato slices on the pan and cook on medium heat.
- Flip the slices over once the bottom side is crisp and golden brown.
- Cover the pan with a lid so that the potato cooks well.
- Sprinkle some more oil if desired.
- Cook till the other side is also brown and crisp
- Insert a knife in the potato slice to see if it’s cooked well.
- Serve hot with rice, rotis or eat plain with ketchup.
