Bread Upma

The chef spirit in most Indians calls one to experiment with different cuisines and ingredients and add a distinctive Indian twist to it. So is it with the humble bread. Upma which is usually a breakfast dish made with semolina or vermicelli has found its destiny in bread too!!  I’ve always had it made by my Mom or Grandma. Yesterday when I found that there were around 6 slices of bread left with no butter, cheese or jam to go with it, Upma is the solution I thought. It’s pretty simple and very tasty too. You can add onions too for the extra flavor. The tomato ketchup is for the tangy taste. Here’s the recipe.

Ingredients:

  • 6 slices of bread
  • 2 tbsp curd
  • 1 tsp mustard seeds
  • 1 tsp channa dal
  • 2 green chilies (optional)
  • 1 tbsp oil
  • 1 pinch turmeric powder
  • 1 tsp red chili powder
  • Salt to taste
  • 2 tbsp hot and sweet tomato ketchup

Method:

  • Tear the slices of bread into 1 inch squares approximately and keep it aside
  • In a pan heat some oil and add the mustard seeds, channa dal and green chilies
  • After it splutters, add the bread pieces
  • Add salt, turmeric, chili powder and curd and mix well
  • Keep stirring it occasionally on low flame till most of the bread crumbs become crisp
  • Add ketchup and mix again for 5 minutes.
  • Serve hot with ketchup or curd
