Say ‘Chaat’ and the first item that comes to mind is the Aloo tikki. The ubiquitous aloo tikki is a north Indian snack made of boiled potatoes and various spices. Aloo means potato, and the word tikki means a small cutlet or croquette. It’s sold in almost every chaat shop or stall right from Delhi to Mumbai. It is served hot along with tamarind and coriander-mint chutney or simply with good ol’ ketchup.
Ingredients
• 2 large boiled potatoes
• 2 slices of bread
• Salt
• 1 tsp Cumin powder
• Few sprigs of coriander leaves
• 2 tbsp oil
Method:
• Hold the bread slices under water for 2 seconds, squeeze well and keep it aside
• In a vessel, mix together the potatoes, bread, salt, cumin powder and coriander leaves and mash well.
• Make equal sized balls of the mixture and flatten it
• Heat a skillet; pour some oil and shallow fry the patties till both sides are golden brown.
• Serve hot with chutney/ ketchup
