You would cross the road a thousand times but probably wouldn’t notice it. But once you do, we bet you can’t forget it. Stamped as the best authentic Tibetan restaurant, the green door-ed Sernyaa definitely brings Tibet in Mumbai. From its very Tibetan décor, mirror image to the small momo shops on the way to any hill station in the north east to its delicious food and the people- all blends beautifully with one common ingredient called simplicity. Simple people’s simple food is what’s rocking the city crowd. And for people from the North-East, its sheer nourishment of nostalgia! This is what a momo shop really looks like.
Here is the recipe of steamed momo, straight from the kitchens of tibet.
- 3 cups flour
- Salt
- 3/4 cup Water
- 1/2 kg minced chicken/meat of your choice
- 1 large onion chopped very fine
- 2 inches fresh ginger, julienned
- 8-10 cloves of garlic chopped very fine
- A bunch of cilantro
- 1 teaspoon of bouillon(Don’t use this if you are making meat momos)
- 3 tbsp soy sauce
- 1 tsp freshly ground pepper
- Salt to taste
- 2 tbsp vegetable/canola/sunflower cooking oil
Preparation:
- Mix the flour and salt to taste and add a little water at a time to make a stiff dough. Do not leave the dough open. Cover it with a lid while you make the filling.
- Heat the oil in a pan and fry the onions till translucent. Add the garlic and fry till it begins to turn golden.
- Add the meat. Do not brown. Put very little water and boil it. The whole mixture should be moist and nicely cooked like minced meat.
- Add the cilantro
- Add the soy and mix well.
- Add the freshly ground pepper, salt to taste and cook till the meat is done.
Round style
- Divide the dough into equal-sized balls and roll into very thin circles
- The circles should be roughly of 3 ½” diameter
- Put a tablespoon of filling in the centre of each circle. Hold the edges and pinch and twist to seal
Half-moon shape
- Fold the Momo in half (into a semi-circular shape) and pinch the edges shut.
- Grease the pan of a steamer with little oil. Put the water to boil.
- Place the Momos in a steaming dish, preferably a double decker steamer and cook for 10-15 minutes.
**Note: While preparing, keep a non stick pan or a moist cloth handy to keep the ready momos before steaming. They tend to dry.
Serve hot!
