One of the easiest lunch box options according to me is Rice preparations. I normally make different kinds of veggies and simply mix it with rice and the results are amazing. One such recipe is the capsicum rice. Capsicum being one of my husband’s favorite veggies, I make this dish very often for him for lunch and even his colleagues keep asking for more.
Ingredients:
- 2 capsicums
- 1 onion
- 2 tomatoes
- 1 tsp Ginger garlic paste
- 1 cup rice
- 1 tsp mustard seeds
- Salt
- 1 tsp coriander powder
- 1 tsp cumin powder
- ½ tsp turmeric powder
- 1 tsp garam masala powder
- 2 tbsp oil
- 1 tsp red chili powder
Method:
- Cook the rice with some salt and keep it aside
- In a pan heat some oil and add mustard seeds
- After it crackles, add chopped onions
- Once they turn pink, add ginger garlic paste and chopped tomatoes and let it cook for 5 minutes
- Add chopped capsicum, salt, turmeric, garam masala, chili powder, cumin & coriander powder, stir it well and cover the lid of the pan till they vegetables are cooked
- Once it’s done, mix it with the rice, adjust salt and serve hot.
