Here’s one of the mouth watering fast food dishes that Mumbai is well known for.

Ingredients:
- 250gms Cauliflower
- 100gms Potatoes
- 1 Big Capsicum
- 1 Big Onion
- 6 – 8 crushed Garlic Pods
- 1 Cup Tomato Puree
- 1 Cup Peas
- 100gms Carrots
- 2tsp Pav Bhaji Masala
- 1tsp Red Chili Paste or 1tsp Red Chili Powder
- 2tbsp Butter
- Salt to taste
To Serve:
- 8 Pav
- Butter for toasting and topping on the Bhaji
- Chopped Coriander Leaves
- Chopped Onions
- Lemon slices
Method:
- Wash and cut big pieces of Cauliflower, carrot, potatoes. Boil peas and all the cut vegetables in separate containers in a pressure cooker upto two whistles. Peel and smash potatoes, and other boiled vegetables also. Keep them aside.
- Chop onions into very small pieces. Heat Butter in a pan on the gas. And then add Onion. Stir-fry until the Onions turn light pinkish brown in colour. Smash Garlic and add in it, sauté for a few seconds, now add Capsicum pieces and sauté for a minute. Add tomato Puree and stir-fry for 2 to 3 minutes. Add Pav Bhaji Masala, Red Chili Paste or Red Chili Powder, mashed vegetables and Salt and mix it well. If the mixture is very thick add some water and while mixing keep mashing the vegetables against the sides of the pan. Remove in a serving bowl. Garnish with some chopped onions, tomatoes and chopped coriander.
- Cut pav / bread, apply butter on both sides from inside, apply little outside and roast them. Serve them in a dish with Bhaji and some onions(ring shaped) and Lemon wedge along with it.
