Inspired by Anjum Anand’s (a UK based Celebrity Chef) show, I was tempted to try out her Semolina Cake. I’ve made a few additions/deletions in the ingredients so I will give you my version of it. I made a pretty flat cake; around 2 inches thick and the outcome was a crisp delicious snack. You can try out a thick loaf if you want to. It’s a quick fix recipe and though I tried it at a whim, luckily I had all the ingredients I wanted. I’ve added only peas to this dish, but feel free to add any vegetable including, potato, onions, beans, cabbage, etc. Ingredients:
- 1 cup semolina (rava)
- 2 tbsp curd/yoghurt
- 2 tbsp fresh green peas
- 1 tsp ginger-garlic paste
- 1 tsp red chili powder
- Salt
- 2 pinch turmeric powder
- A little water
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1 tsp sesame seeds
- 1 tbsp oil
- ½ tsp baking powder
Method:
- Preheat the oven to 200C
- In a large bowl, mix together the semolina, curd, peas, ginger-garlic paste, chili powder, turmeric and salt to make a thick batter.
- Add some water and stir well
- Heat some oil in a pan and add the mustard, cumin and sesame seeds till they splutter
- Add this to the batter and stir well
- Add baking powder and again mix thoroughly
- Grease a baking dish with some oil/ghee and pour the batter into it
- Bake for 30 minutes or until wooden pick inserted in the center comes out clean
- Remove it from the oven and serve warm with chutney
