These delicious, sweet rice dumplings are made from rice flour and are soaked in thick coconut milk.
Sweet Rice Dumplings
Ingredients:
- Rice flour: 1.5 cup
- Milk: 1/2 cup
- Ghee: 1.5 tsp
- Oil: 2.5 tsp
- Water: 2 cups
- Coconut milk: 3/4 cup
- Sugar: 3/4 cup
- Cardamom powder: 1/2 tsp
- Salt: a pinch
- Saffron strands: for garnishing
Method:
- In a pan, add 1/2 cup milk, 1.5 tsp ghee and mix well.
- Add the rice flour and a pinch of salt.
- Heat this in medium flame with continous stirring.
- Once it forms a soft-dough-like consistency, turn off the flame.
- Add 3 tsp of oil and knead the dough.
- The dough should be non-sticky in hands.
- Keep it covered for 5 mins.
- Now make small balls out of the dough.
- Heat 2 cups of water in a pan.
- Once it is warm, add 1 cup coconut milk and allow to boil.
- Now add the rolled balls in it and keep it on a low flame.
- Stir once in a while to avoid sticking to the bottom.
- Once the balls starts floating on the top and milk is reduced to thicker consistency, add the sugar and cardamom powder.
- Mix well and turn off the flame.
- Garnish with saffron.
- Delicious Sweet Rice Dumplings are ready to eat.
